"Menya Kimoto" inherits the Japanese cuisine DNA of Michelin two-star "Kimoto" and challenges the world of noodles and soups with a new sense of value.
■Dashi(Soup stock)
We use Rishiri kelp and bonito flakes shaved in our ramen shop , and soft water is used to bring out the flavor of the kelp and bonito.
We use carefully selected brand-name jidori chicken.
You can enjoy the deep flavor extracted from Kumano Jidori chicken and the unique sharpness of Okazaki Ouhan at once.
We do not use any gara, but use whole chickens, down to the meat, for the broth alone.
Only 6 cups of soup stock is taken from each chicken, and Evian is used.
The finest ingredients (white sea bream, abalone, pike conger, etc.) used at "Kimoto" are selected and soup stock is also made from them to sublimate the chicken broth-based soup.
The gentle broth is made with the beauty of Japanese cuisine, and the saltiness is perfectly adjusted to create a broth that is completely drinkable.
■Chashu pork
Chashu pork is made from brand-name pork such as Tokyo X and stuffed with concentrated meaty flavor using Kimoto's unique and painstaking cooking method.
■Eggs
"Yume-oh" eggs are used. We use only salt water to bring out the flavor of the ingredients.
■Seasoning
Of course, no chemical seasonings are used.
We use "Tatsuno brand" soy sauce, China's finest "Court Salt", and salt from Christmas Island, as well as carefully selected soy sauce and salt.

・Both menus are listed as 3,500 yen/person due to the cancellation policy in case of any cancellations.
・Noodle orders will be taken on site on the day of the event, but can also be selected at the time of reservation.

・We have 10 seats at the counter and 1 table (4 seats), depending on the number of people who have made reservations and the situation on the day of your visit.
