The soup is a triple soup consisting of concentrated pork bone broth from Chinese Soba Noodles Tomita, pure light broth from Ramen Iida Shoten, and concentrated flavor broth from Japanese Soba Noodles Tsuta.
Chinese Soba Noodles Tomita's pork bone broth is made from TOKYO-X, Kagoshima Kurobuta Kuro no Takumi, and Yamanashi Tougen Pork, cooked slowly for more than 20 hours with only water added.
In addition, meat from these brands is also lavishly used to bring out the full flavor of the pork from the bones and meat.
Ramen Iida Shoten's light soup is made from it is made with a generous amount of first-class natural Rishiri kelp from Rishiri Island, Sansui Jidori from Okayama Prefecture, Kokuou black Satsumadori , from Kagoshima Prefecture, Hinaijidori from Akita Prefecture, Nagoya chicken from Aichi Prefecture, and Tankaijidori from Shiga Prefecture, and it provides a solid foundation to catch the chicken's flavor.
The concentrated broth at Tsuta is made with only the largest amount of asari, twice the weight of the broth normally served at Yoyogi Uehara, to thicken the flavor and give depth to both broths.
The sauce is a mixture of Tsuta's own fire-roasted soy sauce and a salt sauce cooked with shellfish and herbs and five different kinds of salt, all in a perfect ratio.
Unshun is made with Iida Shoten's bean paste covered with Tsuta's summer truffle and again wrapped in Iida Shoten's skin. Again, we use only the best brands, such as Super Haruyutaka, Kitahonami, Mochihime, and our own Haruyutaka flour, to create a rich aroma.
The bean paste is also infused with another of Tsuta's secret flavors.
The noodles are homemade at Tsuta, using first-class Haruyutaka flour, which was Onishi's favorite before his death, and are pure white straight noodles with a strong wheat-like flavor.
The rice dish served with the dish is A5 Kuroge Wagyu beef submerged in the Fondo Wagyu Tsuke Soba soup served at Tsuta, topped with Hokkaido Yumepirika, a strong sweet flavor, and San Marzano Riserva, the king of Italian tomatoes.
The sweetness of the Wagyu beef, the sweetness of the grain, and the sweetness of the vegetables are brought together by the rare Wakayama grape sansho (mid-term).
