Restaurant introduction

"「始末の心」Shi-matsu-no-kokoro" has been passed down from generation to generation among the people of Kyoto. ”「始末」Shi-matsu" means "from the beginning to the end". We are grateful to nature and use all ingredients with great care until the very end. Not only expensive ingredients, but also less expensive ingredients, including the bones, head, and entrails, are used up.

I consider foodstuffs as life. I believe that cooking is a process of treating life with care and using up all of it without wasting it. Using up ingredients requires ingenuity and wisdom. The ingenuity and ingenuity required to achieve this leads to originality and individuality, which in turn leads to new innovations in cuisine.

When you spend time in Kyoto, a city surrounded by abundant nature and steeped in ancient customs and culture, you can feel the "signs" unique to each season and the delicate seasonal changes with all your senses. We hope you will experience the rich blessings of nature at the Chef's Table with the theme of the "72 seasons," which expresses the changes in climate, flora, and fauna in short sentences.

*Chef's Table by Katsuhito Inoue will be a shared dining experience, with each group of guests at one large table. The dinner will start at the same time when everyone is present.
*The party will start at 18:00. Please arrive on time.
*Please be sure to take off your shoes before entering the dining room.
*Please note that extensive allergies or food allergies will be treated as a cancellation and may be subject to our cancellation policy depending on the timing of your request. Please confirm in advance before making a reservation.
